Bernie Mev Walking Shoes

I have to blog these shoes! You don’t understand-these are the best thing since sliced bread! My girlfriend at work bought them for her very first trip to Europe (Yay! She’s there right now!), and as soon as I stuck my foot inside her shoe, I had to have them as well!!

Why does everyone love them? They weigh next to nothing, seriously!! You can dress them up, or dress them down with jeans or shorts. These are stretchy, comfortable, stylish, they come in other styles and colors too. They have a bit of a wedge heel, which I like. Walking in “flats” for too long, kills my back. I paid $59.00, which I would gladly pay again for a 2nd pair.

Remember when I took my niece to Disneyland in April? I wore these shoes the whole trip! They passed the “Disney” test, so I will be wearing these on my next trip to Disneyland this Friday, with my sis. I promise you, these shoes will not disappoint you. They gently hug your feet with a nice soft, yet supportive soul! And the little collar on the back of the shoe, doesn’t bother me in the least, and I am ultra sensitive to details like that.

I’m also wearing these when I volunteer at the hospital. They’re great for running around as well as standing for long periods of time. Every time I wear these shoe’s, I sell at least a pair! To date, I have sold 12 pairs to both co-workers and strangers 🙂

Chipotle Black Bean Burgers

Chipotle Black Bean Burgers:

What it took for 4 burgers:

* 1 (14.5 oz) can of black beans, drained and rinsed
* 2 Tbs. minced white onion
* 2 cloves garlic, minced
* 1/4 cup smoked chopped almonds
* 1/2 cup frozen corn, thawed
* 1/3 cup chopped cilantro
* 4 Tbs. jarred chipotle spread, divided
* 1 egg
* 4 sliced pepper jack cheese
* 4 onion buns, split and lightly toasted
* mixed greens
* sliced avocado
* coarse salt, to taste
* lime wedges, for serving

Preheat oven to 425.

In a large bowl, add the beans and lightly mash with a fork. Add the onions, garlic, almonds, corn, cilantro, 2 Tbs. chipotle spread, egg and a small pinch of coarse salt. Mix to combine.

Using your hands, equally form the mixture into 4 patties. Arrange on a lightly oiled baking sheet and bake for 10 minutes. Carefully flip, add the cheese and bake for 8 to 10 more.

Spread the remaining chipotle spread on the bottom of each toasted bun and serve with greens, avocado slices and fresh lime wedges!
