Peanut Butter Cookie

Hands-down the best cookie I’ve ever had in my life!

1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup peanut butter. I used chunky
3/4 cup white sugar
1/2 cup firmly packed light brown sugar
1 egg, room temperature
1 tablespoon milk (I used half-and-half)
1 teaspoon vanilla extract

Set aside a small bowl with 1/4 cup white sugar, for sprinkling.

Preheat oven to 350 F, no need to grease cookie sheet. I lined pan with wax paper.

Add all dry ingredients, mix as you go. Add remaining ingredients. I use my hands to mix the dough well, I prefer hands versus a mixer.

Form 1″ balls of dough, then roll in the white sugar, then place on cookie sheet. Bake 8-10 min, or until the cookie is slightly firm to the touch. Remove from cookie sheet, allow to cool.

Try not to eat ALL the cookies at once! Yes, they are that good, at least to me 🙂

Peanut Butter Fantasy

Are you kidding me?!? This goes above and beyond any peanut butter cookie fantasy!

Half-way to heaven peanut butter cookies
For the cookies:

1 1/2 cups quick oats

1/2 cup flour

1/2 cup sugar

1/2 cup brown sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon vanilla extract

1/2 cup honey roasted peanut butter (you can find it freshly ground at Whole Foods. all it is is honey roasted peanuts ground into peanut butter, which gives it a slightly sweet, roasted honey flavor)
1/2 cup unsalted butter, softened

1 egg

For the filling:


1/2 cup confectioner’s sugar

1 cup smooth peanut butter*

Preheat an oven to 350°F. In a medium bowl, mix the oats, flour, baking powder, baking soda, and salt. Set aside. In a large bowl, mix butter, both sugars, egg, peanut butter, and vanilla. Pour oat mixture into peanut butter mixture, stirring until just mixed. Place rounded teaspoonfuls of batter on an ungreased baking sheet, leaving 2 centimeters between each one. Using your finger, pat dough down so they form small flattened circles. Bake for 8 minutes. Let cool completely on cookie sheet.



While the cookies are baking, whisk together the confectioner’s sugar and peanut butter until light and airy, about 5 minutes.



On a work surface, place half of the cookies upside down. Whisk the filling to lighten it. Dollop 1 tablespoon of filling into the center of each upside down cookie. Place second cookie on top of filling and press together until filling just comes to the edges. Ta-da!

*do not use natural p.b. for this part- the frosting will come out thick and heavy

Peanut Butter Oreo Stuffed Brownies

Layers Of Flavor!

Who doesn’t love when their food is stuffed? These simple brownie bites are stuffed with not one but two Oreos! Then, sandwiched between them is a layer of peanut butter. It’s amazing!

Peanut Butter Oreo Stuffed Brownies

These brownies are over the top! Your kids will love them, your partner will love them and your office mates are sure to love them! They are super simple and stuffed with tons of sweet treats. Don’t worry if you think these are complicated to make. They are beyond easy! Create a little peanut butter Oreo sandwich and cover with brownie batter. Simply bake and enjoy… it’s that simple!

Yield: a 12 cupcake-sized stuffed brownies

Ingredients:
•1 brownie mix for an 8 x 8-inch pan
•24 Oreo cookies
•1/4 cup creamy peanut butter

Directions:
1.Preheat oven to 350 degrees F.
2.Make brownie mix according to directions. Do not bake.
3.Fill cupcake pan with cupcake liners. Add about a teaspoon of peanut butter between two Oreo cookies. Put completed peanut butter Oreo sandwich into a lined cupcake space.
4.Scoop about 2 tablespoons brownie batter over top of the peanut butter Oreo sandwiches.
5.Bake for about 20 minutes until cooked through. Let brownies cool completely before eating.
