Sweet Creamed Corn Pudding

This warm, slightly sweet corn side dish will make your taste buds happy! Easy to make too!

Ingredients
1 (14.7oz) can creamed corn
1 TBSP corn starch
1/2 cup milk (fat free, 1%, 2%, whole milk, whatever you have)
1/2 tsp vanilla
2 eggs, beaten
1/3 cup white sugar
2 TBSP melted butter

Supplies you will need:
Mixing bowl
Small baking dish
Whisk
Cooking spray (like Pam)

Mix all ingredients together, any order. Pour into greased dish. The dish I used was 5″ x 10″ (bread pan size). 350 degree’s for 45 min, or until set. Serve as a side dish with your main course. Or top with a little whipped cream for dessert. Enjoy in good health 🙂

Thai Coconut Tapioca Pudding with Cayenne-Spiced Mango

If you want to be slightly daring, give this recipe a try. You will probably need to go to the market. As always, cooking shouldn’t make you stressed out. Just relax and do your best! This may become your new favorite 🙂

Ingredients
•1 2×1-inch piece fresh ginger, peeled, sliced
•1 1×1-inch piece fresh galangal,* peeled, sliced
•10 Thai basil leaves*
•6 fresh cilantro sprigs
•2 kaffir lime leaves* or 2 teaspoons grated lime peel
•1 tablespoon sliced lemon grass*
•2 cups water
•2 cups whole milk
•1/2 cup sugar
•1/2 cup small pearl tapioca* (not quick-cooking)
•1 13.5- to 14-ounce can unsweetened coconut milk*
•1 large mango, peeled, cut into cubes
•1 tablespoon fresh lime juice
•Pinch of cayenne pepper
•Thai basil sprigs

Preparation

Combine first 6 ingredients in food processor; blend 20 seconds. Transfer to medium saucepan; add 2 cups water and bring to boil. Remove pan from heat and let steep uncovered 20 minutes. Pour mixture into strainer set over heavy large saucepan; press on solids to release flavored liquid. Discard solids in strainer.

Add milk and sugar to flavored liquid in pan; bring to boil. Stir in tapioca; return to boil. Reduce heat to medium and simmer uncovered until pudding thickens and is reduced to 2 1/4 cups, stirring frequently, about 35 minutes. Stir in coconut milk (pudding will be runny). Transfer to bowl. Cover and refrigerate overnight.

Toss mango cubes, lime juice, and cayenne in medium bowl. Divide tapioca among 6 stemmed glasses or bowls. Top with mango mixture; garnish with basil sprigs.

*Galangal, Thai basil, kaffir lime leaves, lemongrass, small pearl tapioca, and unsweetened coconut milk are available at Asian markets.

Peanut Butter Oreo Stuffed Brownies

Layers Of Flavor!

Who doesn’t love when their food is stuffed? These simple brownie bites are stuffed with not one but two Oreos! Then, sandwiched between them is a layer of peanut butter. It’s amazing!

Peanut Butter Oreo Stuffed Brownies

These brownies are over the top! Your kids will love them, your partner will love them and your office mates are sure to love them! They are super simple and stuffed with tons of sweet treats. Don’t worry if you think these are complicated to make. They are beyond easy! Create a little peanut butter Oreo sandwich and cover with brownie batter. Simply bake and enjoy… it’s that simple!

Yield: a 12 cupcake-sized stuffed brownies

Ingredients:
•1 brownie mix for an 8 x 8-inch pan
•24 Oreo cookies
•1/4 cup creamy peanut butter

Directions:
1.Preheat oven to 350 degrees F.
2.Make brownie mix according to directions. Do not bake.
3.Fill cupcake pan with cupcake liners. Add about a teaspoon of peanut butter between two Oreo cookies. Put completed peanut butter Oreo sandwich into a lined cupcake space.
4.Scoop about 2 tablespoons brownie batter over top of the peanut butter Oreo sandwiches.
5.Bake for about 20 minutes until cooked through. Let brownies cool completely before eating.

Snickers Apple Pie!

I don’t need any excuse to make this! This is pure heaven in a pie plate! This is a great make and take treat for the office, that will stop you from eating the whole pie. It has apples, it’s practically health food, hahahaha. http://www.lovewithrecipe.com/recipe/415.htmlsnickers apple pie
1 pie crust
3 green apples diced
1/4 cup caramel ice cream topping
15-20 mini snickers chopped
2 1/2 cup COOL WHIP whipped topping softened
1/3 cup can sweetened condensed milk
2 oz cream cheese (softened)
Instructions

Spread snickers on bottom of pie crust. Next layer the apples next. Then drizzle caramel on top.
Combine cool whip, cream cheese and sweetened condensed milk together in a small bowl and spread on top.
Drizzle with caramel and a few snickers. Place in refrigerator for at least 2 hours. Take out about 5 minutes before serving and top with fresh apple slices. Enjoy!
**notes: this pie is best on the first day! if you want to keep the apples from browning, you can put a little lemon juice on them

7.5oz can black beans, drained and rinsed

1 egg

1/8 c nonfat, plain greek yogurt

1/8 c cocoa powder

1/2 tsp vanilla

1/3 c sugar*

1 square Baker’s semi-sweet chocolate, chopped
